White tea will be withered after it has been picked. The fresh tea leaves should evenly placed on the drying tray, and then pushed it into the drying room for withering. The whole withering process takes about 30 hours, and the temperature in the drying room should not exceed 35 ℃.
The drying process is divided into three different stages:
At the first stage, the temperature is required to be set at 20℃-25℃ for the first 10 hours.
At the second stage, the temperature shall be set at 27℃-28℃ after slow heating for 10 hours. After 10 hours withering and heating, the temperature shall be set at 35℃. The ventilation of the drying room shall keep uniform during the whole process.
At the three stages, the withered white tea shall be stacked together, covered with sackcloth, afterwards, the white tea is fermented slightly for 3-5 days.
Conclusion:
After the accumulation and fermentation of the white tea is completed, it is dried at high temperature. The temperature of the dryer should be set to 60°C-75°C, and should not exceed 75°C. The drying time is about 10 hours. The moisture content of white tea dried in this process shall be controlled below 5%.
