The processing steps of dried apricots
(1) Cleaning
Wash the fresh apricots that meet the requirements with clean water and drain the water.
(2) Dig out the apricot pits
Use a stainless steel knife to cut along the white seam line of the pulp. After the fresh apricots are drained, they are placed in a basket with stainless. Dig out the apricot pits, rinse the pulp with water;
(3) Fumigation of sulfur
Send the material basket or bamboo curtain with apricot slices into the smokehouse, put it on the wooden frame, pour the burning charcoal into the iron pan in the center of the house, and quickly sprinkle the sulfur (100kg apricot slices with 4kg sulfur) on the smoker. On the charcoal, immediately leave the smokehouse, and then seal the doors and windows tightly for about 2 hours. When the fruit slices are yellow and translucent, open the doors and windows for ventilation. When the air is fully exchanged, move the apricot slices outside to dry for 1-2 hours, and then dry.
Dried apricot drying process
The apricot slices are sent to the drying room, arranged layer by layer on the wooden rack, and then the doors and windows are closed for drying.During the first 4-6 hours, the temperature is maintained at 40°C-50°C, and then gradually increased to 70°C-80°C. With the evaporation of the moisture in the apricot slices and the increase of the indoor humidity, the ventilation should be opened in time to remove the water vapor, and the closing time should be controlled according to the dry humidity in the drying room and the drying degree of the apricot slices. During the drying process, the apricot slices on the upper and lower layers of the grill should be exchanged to make it heated evenly, and strive to dry the same batch of raw materials at the same time. The drying time is generally 24-36 hours. If the temperature and humidity are not properly controlled, the drying time will be prolonged, and the color and luster of such products are poor and the quality is poor.
