Edible sea cucumbers mostly live in the intertidal zone or shallow sea, they also live in the deep sea and even in the abyss, and most of them are flatfoot sea cucumbers. Sea cucumber is not only a precious food, but also a precious medicinal material.
Processing steps of sea cucumber
(1) Cutting the sea cucumber and squeeze the intestines. Wash the sea cucumber with clean water, cut it into 2-3cm sections and take out the internal organs and intestines. If the intestines are not removed, the whole sea cucumber will be melted away.
(2) Cleaning sea cucumbers. Sea cucumbers are difficult to clean. Therefore, after taking out the internal organs, the sea cucumbers shall be cleaned repeatedly, in general, it should wash 5 times until they are totally clean.
(3) Steaming sea cucumbers. When the water temperature is 90 degrees, put the cleaned sea cucumber into a pot and cook, stir it back and forth with tools to prevent uneven water temperature. At this time, it can be seen that the sea cucumber shrinks rapidly and the sea cucumber spines are prominent. After about half an hour, get out of the sea from the pot and mix in coarse salt as appropriate.
Sea cucumber drying process
The drying process for sea cucumber is as follows: Place the boiled sea cucumbers on the material tray, and put the material tray into the heat pump drying room, afterwards, set the drying temperature, humidity and time parameters through the intelligent control system. If it is the ordinary salt-dried sea cucumbers, the drying temperature can be set slightly higher. If it is the high-quality light-dried or purely dried sea cucumbers, try to use the cold-air drying mode of the dryer, and it is better to set the temperature at about 10℃-30℃. The sea cucumbers which are dried by cold air will appeared as in black and bright color, the scent is well preserved, and it has kept the special scent of sea cucumber.
