Sea shrimp drying process
(1) The cooked shrimp can be dried with shell or without shell. After the cooked sea shrimps are drained, they are evenly spread on the baking tray, loaded into the material truck and sent to the heat pump drying room.
(2) According to different types of sea shrimp, it is advisable to set the temperature of the dryer’s intelligent control system at a medium high temperature, e.g. 50°C-70°C. The drying time is better about 4 hours, and the moisture content is 18%. During the drying process, a slightly larger circulating air volume is generally required, and the wind speed should relatively high to avoid the moisture staying on the surface of the dried shrimp. The key elements for drying sea shrimps are inhibiting the growth of bacteria, and maintaining the color of the dried shrimp.
After the above drying steps, the dried shrimps have a complete body shape, neat appearance with natural color. The meat is plump, and it has kept its curved body with unique natural fresh fragrance of shrimp.
