Scallop drying process
The drying process of scallops is more complicated to adjust. One batch takes 40 hours to complete the drying process. If the temperature is adjusted to above 50 °C, the time will be shortened a lot, but the color will be darker. Therefore, the temperature depends on personal requirements.
