Rice noodle processing steps
1.Rice washing and soaking
Pour the high-quality rice into the rice-soaking container. Set the temperature of the soaked rice at around 25 degrees to promote the rice to be soften within a controlled time period.
The soaked rice is refined with professional machinery. You should grind the rice evenly and finely, so that the rice milk and nutrients are fully combined, and the rice noodles are more delicate.
3.After steaming the powder, extrude it intovermicelli
After the rice milk is steamed at a high temperature, it is solidified into a rice sheet before the extrusion process. In general, you should choose different aperture models, after squeezing, the rice sheet turns into rice noodles, the thickness is different, the taste is different. Afterwards, steam the rice noodles in a steamer at 100°C to 105°C for 3-5 minutes to ensure the rice noodles is totally cooked and ensure that the rice noodles are hygienic, clean and sterile.
Rice noodle drying process
1.Low temperature stage
Use a heat pump dryer to remove as much moisture as possible from the surface of the rice noodles at this stage, and gradually increase the temperature to make the inside and outside temperature of the rice noodles consistent. The temperature generally set at about 25 degrees.
2.High temperature stage
After the rice noodle enters the high temperature stage, the internal moisture is gradually evaporated, the rice noodle is dried evenly, and the shape is good. The temperature generally set at about 38 to 42 degrees. Avoid the explosion caused by excessive drying.
After entering the cooling stage, the drying process of rice noodles is basically completed. This stage is a process of decreasing temperature. The temperature is controlled according to the climate conditions and the actual dryness and wetness conditions of the rice noodles. Keep the temperature decreasing gradually and prevent the rice noodles from cooling down too quickly, so that the surface temperature could keep consistent with the internal temperature, and the bubble phenomenon will not occur, and the rice noodles will not burst.
According to different regions and types of rice noodle, the drying time of rice noodle is generally 8-12 hours. The baked rice noodles will not change color and will not break, the dryness is uniform, the color is good, the taste is good, and the rehydration capacity is good. This type of dryer is also suitable for drying noodles, sweet potato flour, etc.
