Salted egg yolk processing steps
(1) Pick and beat eggs
With the advancement of social science and technology, salted egg yolk processing has adopted advanced egg selection machine and egg beating machine for select and beat eggs. These kind of machine operates very fast, thus there is no bad eggs that will affect the quality of the raw material for making salted egg yolk.
(2) Pickled egg yolk
Put the egg yolks that the protein green has been drained into the pickling salt solution with 15% concentration, and let the egg yolk soak in the solution for 30 minutes, then place them in a bamboo sieve evenly. The pickled egg yolk has a certain solid shape and is not easily deformed.
Salted egg yolk drying process
1.Loaded the egg yolks into the material car and put them into the drying room for drying.
2.At the first stage, the temperature of the drying room is set at 65°C, and the egg yolk should be turned over for every 15-20 minutes. Each batch of the egg yolk should be baked for 40 minutes.
3.At the second stage, the temperature should set at 10 °C, and the egg yolk should be cooled down in an environment of 10 °C for 5 minutes after the drying process has been completed.
4.After completing the drying process, the cracked ones shall be removed, and the intact ones with uniform color and luster are packed into different grades.
5.Taking the 6P dryer as an example, a single drying room has 8 material carts with 0.85m*1m*1.7m, 4000 egg yolk could be loaded in one car, and 32,000 pieces of egg yolk could be dried in one batch. 40 drying minutes for one batch, which means the dryer can dried 400,000 salted egg yolks everyday.
