The dried tangerine peel was evenly placed on the self-made square grid, and placed in the drying room. The working temperature of the dryer was set to 45 °C, and the drying was performed at a constant temperature for 7 hours. The samples were taken and weighed. The quality of the peel is close to 25% of that of the fresh peel, and the water content of the peel is about 15% of the finished product. During the drying process, attention should be paid to make the peel evenly heated. Generally, the grids should be replaced every 2 hours.
