(1) The first stage is the “cold air setting stage”. This stage is mainly to shape the noodles. The cold air setting stage is mainly to control the temperature, time and humidity. The most suitable time for this stage is 20~30 minutes, the temperature is 20~25℃, and the humidity is 55~65%RH .
(2) The second stage is mainly to diffuse the moisture in the drying room. The control time is 30~40 minutes, the temperature is 30~35℃, and the humidity is controlled at 75~85%RH. It should be noted that at this stage, you should not be “urgent” .
(3) The third stage is “heating and dehumidification”. This stage takes a longer time, 80~90 minutes, the temperature is 35~45℃, and the humidity is 65~75%RH.
(4) The final stage is “cooling and heat dissipation”; after the above three stages, the water in the noodles has basically been removed, so this stage is the stage that needs to be slowly baked, and the time is about 90 minutes, the temperature is 26~28℃, and the humidity is 50~60%RH.
