Process steps of matsutake
Firstly, you should peel off the soil and weeds on the fungus, use a ceramic knife or bamboo knife to carefully remove the sediment at the root. Do not use a steel knife because it will make the matsutake smell fishy. Finally, brush the surface dust with water quickly. You can use a small soft brush when necessary, and remember not to soak the matsutake mushrooms in water, because the texture of the matsutake mushrooms will be greatly reduced after absorbing water. When placing it on the plate, the cap should be upward and the stalk should be downward, and they should be placed evenly. The pine grass must be dried within 6 hours after being harvested. If there is a refrigerator, the storage time can be appropriately extended.
Matsutake drying process
When the temperature of the drying room is raised to 35°C, the matsutake mushrooms can be pushed into the drying room. During the drying process, it must be baked at a low temperature at first beginning, and then gradually increase the temperature. Usually, the temperature is increased by 1℃-3℃ every 1 hour, and the maximum temperature should be controlled below 70℃. Generally, it is required to bake between 35℃ to 40℃ for 6 hours, between 40℃ to 60℃ for 8-10 hours, and between 60℃ to 70°C for 2 hours. The higher the moisture content of the pine mushrooms, the longer the baking time at low temperature. If the temperature rises very high at the beginning of drying, it will cause the tissue to lose water very quickly, and the cap of the mushroom would be deformed and not round, meanwhile, the gills are inverted, the cap is cracked, and the color becomes black, which also destroys the activity of the enzyme, so that the mushroom loses its original fragrance. Heating cannot be interrupted during the drying process, the temperature should be controlled precisely, and the temperature fluctuations should not be too large, otherwise the drying quality will be affected.
In the drying process of matsutake mushrooms, in addition to strictly controlling the heating temperature, dehumidifying timely is also an important part. The basic principle of dehumidification is as follow: in the early stage, when the temperature of the drying room is kept at 35°C-40°C, it should be fully dehumidify. When the temperature rises to 40 ℃ – 60 ℃, intermittent dehumidification can be carried out. When the temperature is above 60 ℃, the moisture removal amount of dehumidification can be controlled by time. Excessive dehumidification is not allowed, which will make the color of matsutake turns white
After drying for 16-18 hours, you can open the door of the drying room to check whether the dryness of the matsutake mushrooms is qualified. When checking, press the junction between the cap and the stem with your fingers. If only traces appear on the mastutake, the dryness is qualified.
